Inspiration: Duran Duran “Night Boat”

If you’ve ever stood on the edge of a quay for any length of time, you probably got pretty hungry. Don’t worry, we have just the thing to send shutters all through you because our Ripple River Yellow Cake is to-die-for for any true Duranie. Dark chocolate swirls give it a moody vibe that will echo your, echo your taste buds.

Ripple River Yellow Cake Ingredients:

  • Swirl Bundt pan
  • Nonstick cooking spray for bundt pan
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 4 tablespoons black cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2/3 cup whole milk, at room temperature

Optional Toppings:

  • Cake Toppers: Toy snakes, spiders, bats, crows, ghouls or monsters, edible black pearls, anchors, pirate-themed toppers, black sailboat sail (bonus points if the sail says “Drum”)
  • Hot fudge drizzle

Instructions:

  1. Preheat the oven to 350.
  2. Spray a 6-cup Bundt pan with nonstick cooking spray.
  3. Whisk flour, baking powder and 1/4 teaspoon salt in medium bowl. Set aside.
  4. Add black cocoa powder, 1/4 cup granulated sugar and the remaining 1/4 teaspoon salt to a small bowl and mix to combine. Set aside.
  5. Add butter and remaining 3/4 cup granulated sugar to large bowl. Mix with a hand mixer until fluffy (1-2 minutes). Add the eggs and vanilla, mixing well. Gradually add the flour mixture in three parts, alternating with the milk, starting and ending with the flour. Mix until just combined.
  6. Add a third of the batter to the base of the prepared pan and use a spoon or offset spatula to spread it into a very thin, even layer. Top the batter with half of the cocoa mixture. Repeat the process, layering half of the remaining batter followed by the remaining cocoa mixture, ending with the final third of the batter.
  7. Place the pan in the oven and bake for about 30 minutes, or until a toothpick inserted into the cake comes out clean.
  8. Allow the cake to cool for 10 minutes, then invert it onto a serving platter. Top with spooky or nautical-themed cake toppings or a hot fudge drizzle.
